
Flat Bread Pizza
Ingredients
- 4 whole wheat or whole grain flatbreads
- 1 15 ounce can of low-salt diced tomatoes (substitute 3 fresh large tomatoes, chopped
- 1 6 ounce can tomato paste
- 1 teaspoon dried oregano leaves
- 4 cup baby spinach, chopped
- 1 15 ounce can corn, rinsed and drained
- 2 cups shredded low-fat mozzarella cheese
- 1/2 teaspoon crushed red pepper flakes (optional)
Preparation Instructions
- Heat oven to 400 degrees.
- In a small bowl, stir together the can of diced tomatoes and tomato paste until a thick sauce forms. Add the oregano and optional crushed red pepper flakes. Mix to combine.
- Arrange flatbreads on two baking sheets. Evenly spread 1/4 cup of tomato sauce onto each flatbread, leaving about a 1/2 inch at the edges. Sprinkle the spinach and corn on flatbread and top with shredded cheese.
- Bake 15-20 minutes until cheese is melted and begins to brown. Cut into triangles and enjoy.
