
Stir-fried Vegetables with Beef
Ingredients
- 2 cups lean ground round steak or stir fry lean steak, cubed
- 1 cup brown rice (Brown Rice recipe, optional, add 688 calories to this recipe per serving)
- 1 cup low-sodium beef broth
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon corn starch
- 1 teaspoon garlic powder
- 1 tablespoon vegetable oil
- 5 cups of a mixture onions, bell peppers, carrots and zucchini
Preparation Instructions
- Mix together broth, soy sauce, cornstarch, garlic powder and pepper, set aside.
- Heat oil in a pan over high-heat and add beef cubes.
- Stir and cook over high heat until cooked thoroughly.
Remove beef from pan. - Place vegetables in the same pan.
- Cook for 5 minutes, stirring often.
- Lower heat. Return beef to pan.
- Pour broth mix over vegetables and meat. Stirring constantly, cook 2 minutes
or until liquid thickens. - Serve immediately over cooked rice.
- Refrigerate leftovers.
